Spring rolls for lunch

I know I posted about this before but these are so GOOD and so easy.

1)buy spring roll skins (tapico sheets or rice paper)
2)run one under water, lay it on a plate, add mushrooms and/or tofu or
turkey ro shrimp,
3)add vermicelli (or thin spaghetti, (I also added tomatoes and blueberries)
4)add lettuce and/or spinach
5)fold like an envelope
add sauce or salad dressing
6) roll up and eat--YUM YUM!

Blueberries and tomatoes seems like an odd combination, but I haven't tried it, so I won't judge. The photos are beautiful.

Cheeseburgers are good--but I am allergic to cheese.

you know how there's usually a sauce with spring rolls--the blueberries are my sauce.

We put fruit in our salads regularly and like it. Strawberries, blue berries, apple pieces.
